breakfast parfait

My kids love to eat expensive pre-made fruit parfaits that are sold at coffee shops and cafes. However, one of the parfaits my children love to buy has 19 grams of sugar!  That is a large amount of sugar for a "healthy" breakfast. 

This winter, my daughter had the idea to warm up frozen blueberries every morning.  She puts them on her pancakes or just eats them plain in a bowl.  The leftovers always go into the refrigerator and one day we realized that the fruit would be delicious added to yogurt.  Voila, a parfait!  The blueberries, when heated, turn into a grey, syrup-like consistency.  It may be the easiest breakfast you have ever made.

FRUIT PARFAIT

1 LARGE BAG OF FROZEN ORGANIC BERRIES (we prefer blueberries and strawberries) 

PLAIN ORGANIC GRASS-FED YOGURT - preferably raw if you can find it

SPRINKLE OF HOMEMADE GRANOLA OR YOUR FAVORITE LOW SUGAR STORE BOUGHT VERSION (we buy this one)

COOK THE BERRIES ON THE STOVE UNTIL WARM, STIRRING FREQUENTLY.  *PLACE IN FREEZER TO COOL QUICKLY OR IN REFRIDGERATOR

WHEN COOLED, POUR OVER YOGURT.  SPRINKLE GRANOLA ON TOP.  

* I COOK A VERY LARGE BAG OF BERRIES ON SUNDAY FOR OUR PANCAKES AND THEN STORE IN THE REFRIDGERATOR FOR THE WEEK.
